National Coffee Day is probably the only food holiday I get excited about. Coffee keeps me running on a daily basis. Actually, my kids and husband should celebrate it too. Without it, I am not sure they would get cared for the same way, lol! 😉 But, seriously, what better way to pay homage to coffee, then to turn it into a syrup? I love espresso and have made a simple and deliciously intense syrup, which you can use on ice cream, bread, pancakes, desserts, or even to flavor milk. It is super easy to make and can be used so many ways. Happy National Coffee Day, and I hope you enjoy my espresso syrup!
Ingredients
- 1/2 cup sugar (I use sugar in the raw)
- 2 shots of freshly brewed espresso
- 1/4 tsp. vanilla extract
Instructions
- In a pot (I use stainless), combine all of the ingredients and cook over medium heat. Stir as needed until it comes to a boil. Let it continue to boil for 3 minutes, watching closely, and continuing to stir as needed. You will see foaming and that is normal. Just remember not to leave it once it boils.
- Remove from the heat and use immediately or store in the fridge. I like this syrup best once it cools and begins to thicken a little more. It will hold up well for several days.

You know that medical advice that starts with ” you should stop drinking coffee…”. Well, when there will be a cold day in hell 😉
I wish you a nice coffee day, with some aromas or memories from a briki slowly brewing ena elliniko kafe!
I am totally with you Spira! Coffee is a way of life. 😉 Thank you, and have a wonderful weekend!
Yum. Sounds wonderful on ice cream or pancakes. I make espresso every morning, so this is an easy one. I’m going to give it a try, Antonia. Thanks for the recipe! Happy Pumpkin Spice month coming up!

Hi Antonia – I wasn’t sure what was going on. One minute it’s Zeba co-hosting and then you – anyways let’s have a great party. I will have to try your syrup the next time I make waffles/pancakes. I need 2 cups of coffee every morning to get my day going 🙂
Hi Judi! Ha, it’s great to be co-hosting with you! That’s awesome, I hope you enjoy it. I can’t function without coffee either 😉 Have a wonderful weekend!
Whoa Antonia! I have never heard of this, but I am totally on board with it! Perfect on ice cream– love coffee ice cream and this would be even better! How did you think of the idea?? It looks delish! And hope you have a great weekend– have any plans?? hugs hugs!
Thank you Rhonda! I wanted to do something a little different than a simple syrup, so I decided to use espresso instead of water. It is very tasty, and so great with ice cream! No, just sports and trying to catch up and relax. What about you?
It does sound delish– and so inventive!! We had our kids her with a family of friends from China!! They made us a Chinese feast on Saturday night. Lots of noisy fun! xox
You are so kind, thank you! That sounds like such a fun visit, and I bet the food was amazing!
What a versatile and yummy syrup to have on hand Antonia! I would pour it on my ice cream too. happy FF and thanks for co-hosting!
Thanks Sandhya! It is sooo good on ice cream. 😀 Happy Fiesta Friday, and I hope you are enjoying your weekend!
Yummy! As a passionate espresso lover, this syrup is just perfect for me. Thanks for the awesome recipe!
Thank you Agness! Have a wonderful day! 😀
I love making syrup from scratch. Vanilla is a good addition!
Me too! Thank you Jacqui, and have a wonderful Monday! 😀
I am an espresso man myself. Coffee does NOT act as a stimulant in my body. I drink 20 ounces (bustello) at night just before bedtime. I do not recommend people try this!! I am certain my receptor sites have become desensitized to the effects of caffeine. I simply love a deep rich flavorful coffee.
Your syrup sounds amazing. Could xylitol or stevia be substituted for the raw sugar?
Ha, that is very cool! I do too, the richer the better! Thank you Dr Jonathan! You can make a simple syrup with both, but I always use sugar. I looked and found several simple syrup recipes with stevia. After you find one you like, substitute the water for espresso and than adjust as needed. I would add the vanilla after you get your sweetness to coffee ratio right. I hope this helps! Have a fantastic weekend! 😀
Sounds delicious, Antonia …Happy Coffee Day !
Thank you Swapna! 😀 Coffee Day should be everyday! Have a wonderful weekend!
This syrup – yum BTW – drizzled on waffles would rock my Sunday breakfast world!
Thanks! That does sound yummy!
