I love all kinds of food, but the food that takes me back to my childhood is almost always going to be Greek. My mom used to make the most amazing food for us. One of my favorite treats were her Greek fries, which are potatoes pan-fried in olive oil. I remember coming back from the beach and she would make a platter of meze (appetizers): chunks of feta cheese, tomatoes and cucumbers covered in olive oil, olives, and bread. She would fry potatoes in olive oil (and if you have had olive oil fries you know what I am talking about…delicious). We would sit outside in our bathing suits and eat Greek style (as she would call it when we ate from the same platter). Sometimes she would make the potatoes and then top them with eggs and sprinkle feta cheese on top. It was amazing! Every time I make this dish, I think of those days. I absolutely love the combination of eggs, potatoes, olive oil, and feta cheese. Serve it with a salad, or veggies, and it makes a complete meal. It is super easy and delicious. I hope you enjoy it!

#1 Use the other half of the potato to make oven fries or boil and make mashed potatoes for a future meal.
#2 Serve as a dinner or lunch either on a meze platter or paired with veggies.
Ingredients
- 1/2 large baking potato
- 4 eggs
- 1/2 Tbsp milk
- 3 oz. feta cheese
- 1/3 cup olive oil (I use extra virgin)
- 1/2 tsp. salt
Instructions
- Peel and cut-up the potato into a combination of medium thick steak fries and regular fries (they will fit better in the pan this way).
- Crumble the feta cheese and set aside.
- Pour the olive oil in the pan and place over medium/low heat (I use an 8 inch stainless frying pan).
- While the oil is heating, beat the eggs and milk together.
- Once the oil is heated (the oil will be visibly thinner and you will hear a slight sizzle when a potato touches it), place the potatoes in a single layer in the frying pan (they can overlap a little). You will be cooking these low and slow, so you will need to be patient. It should take 10 to 12 minutes for the potatoes to brown on the bottom.
- Check the potatoes frequently and flip once they are golden brown on the bottom.
- Once the potatoes have been flipped over, give the eggs an extra couple of stirs and pour evenly over the potatoes. Let the bottom cook, and lift periodically around the edges. Once the egg on top has mostly turned solid, evenly sprinkle half the cheese and half the salt. Then carefully flip over as one unit. Sprinkle the remaining cheese and salt on top. Let the bottom cook. You can cover to soften the cheese on top. Enjoy!
- Note: If you decide to double the recipe, cook in 2 batches or use a large pan.
