Garlic and Feta Cheese Dip

Happy December everyone!  I can’t believe that it is already December.  I hope everyone is having a wonderful holiday season.  In my house, we have been busy decorating.  I have also been busy thinking about food, one of my favorite things about this time of year!  Appetizers are a big thing for me during the holidays, and I like to create an interesting spread.  I have been thinking about Greek inspired appetizers, and will share a couple this month.  I came up with a yummy and easy dip, by combining pan-fried garlic, with feta and ricotta cheeses.  I was thrilled with the way it turned out.  It is creamy with a delicious feta cheese taste and a wonderful garlic flavor.  It pairs nicely with crostini, chips, crackers, and more.  It is also super simple to make and can be made in minutes.  I hope you make this dip part of your holiday spread 🙂

Garlic Feta Cheese Dip

If added to an appetizer spread, this dip is sufficient for 15 to 20 guests

Garlic Feta Cheese Dip

Ingredients

  • 8 oz. feta cheese (I use cow's milk feta)
  • 6 oz. ricotta cheese (I use whole milk ricotta)
  • 1 clove garlic
  • 1 Tbsp. olive oil
  • Chop the garlic. Preheat the oil over medium heat and add the garlic. Cook until the garlic begins to turn golden (do not burn the garlic). Stir as needed during this process. Let the garlic and oil cool.
  • Add all of the ingredients to the food processor and puree until smooth. Store in the fridge in an airtight container. This dip can be made several days ahead.
  • Notes

    #1 This is a great make ahead dip, and can be made several days ahead.

    #2 Use leftovers as a spread on bread or sandwiches.
