Happy May everyone! I am loving the beautiful flowers and green trees, but not the summer-like heat. Although, it has me dreaming of more relaxing days ahead. Lately, it has been all about wrapping up school and sports. I have been so busy, I haven’t posted any new recipes recently or visited my wonderful blogger friends. With these warm temperatures and Cinco de Mayo around the corner, I thought it would be a great time to re-post a recipe I came up with a couple of years ago. I first tasted a Mexican inspired slaw at a restaurant in Charleston, SC. It was amazing and I was hooked! After a couple of tries, I came up with a slaw that tasted very similar, and it has become one of our favorite warm weather side dishes. Also, try my Turkey Breast Tacos, which are a delicious and healthier way to enjoy a taco! Have an awesome Cinco de Mayo!
Ingredients
- 1/2 head of cabbage
- 1/2 large sweet onion
- 3 jalapeno peppers
- 1/2 bunch fresh cilantro
Dressing
- 2 limes (about 1/4 cup lime juice)
- 1/3 cup and 1 Tbsp olive oil (I use extra virgin)
- 4 tsp. sugar
- 2 tsp. salt
- 1/2 tsp. ground cumin
- 1/4 tsp garlic powder
Instructions
- Thinly slice the cabbage (Hold the cabbage with core-side down and slice in half, and remove the core. Then slice the cabbage, with the inside down on the board. If the cabbage is large you may have to half the cabbage again to minimize the size of the pieces. Take your hands and break apart the sliced cabbage and you will have slaw-ready cabbage.).
- Julienne the onion and peppers into slender long pieces. Mix all of the veggies together well.
- Chop up the cilantro and mix with the veggies.
- Juice your limes. Make the dressing, by whisking all of the ingredients together.
- Pour the dressing over the slaw and mix well. Refrigerate at least one hour before serving if possible, or overnight. Taste the slaw and add more sugar if you like less of a lime taste and more salt if desired. Enjoy!

This coleslaw sounds great! My family loves coleslaw and I am always looking for new versions. I have never tried a Mexican-inspired version. I will definitely keep this in mind, especially for this Friday!

With all the Mexican restaurants here in Nor CAL I’m surprised their coleslaw isn’t on any menu in the restaurants and taqueria’s I frequent any time of the year. ??

Slaw is one of my favorite salads but for some reason not many in the family like it. This is a recipe I can cut in half and enjoy all to myself. Great side for any meal, especially something grilled. Thanks for going solo this week Antonia 🙂
