My family is a huge fan of Mexican food. I like making it at home and putting my own spin on it whenever I can. Tacos have always been a favorite of mine, especially hard shell tacos. I love a good crunch, and I balance the fried shell with veggies and a lighter meat. Don’t worry, the turkey breast is nice and moist, and you won’t miss the beef. I cook it in a little olive oil and then add chicken stock, tomato paste, and spices, and let it reduce. It makes a wonderful, moist, and light taco meat. Did I mention it is super simple to make, and can be made in around 30 minutes? My family loves these tacos, and it was quite a challenge having enough leftover for the photos 😉 I love to make it with my Mexican Slaw, salsa, guacamole, and black beans, and have a Mexican feast. - 1 lb ground turkey breast

- 1 Tbsp tomato paste
- 1 3/4 tsp. salt
- 1 tsp. sugar
- 1 1/4 tsp. garlic powder
- 1 1/2 tsp. ground cumin
