My kids and I are looking forward to everything fall has to offer, especially pumpkin spice! We love to have it for breakfast, and every year these pancakes are on the menu. They have a wonderful punch of pumpkin spice, which is a marvelous way to begin a day! Ā It has become customary for me to share this recipe every year. I hope you enjoy them and make them a part of your fall tradition.
Notes
#1 If you don't have buttermilk, you have 2 options: use regular milk (you will need around 1 3/4 cups milk ) or add vinegar or lemon juice to milk and let sit for 5-10 minutes before using (it is common to use 1 Tbsp of vinegar or lemon juice per each cup of milk).
#2 Make the dry ingredients in advance (store in an airtight container for longer storage). Add the wet ingredients when you are ready to use.
#3 Make a large batch and freeze. These pancakes freeze well and make for a quick, but homemade breakfast! Take out, defrost, reheat, and enjoy.
#4 Eat as a snack any time of the day!
Ingredients
- 2 cups all purpose flour (I use unbleached)
- 2 tsp. baking powder
- 1 tsp. baking soda
- 2 Tbsp and 1 tsp. Zoale's pumpkin spice
- 1 tsp. salt
- 2 Tbsp sugar
- 2 cups buttermilk
- 1 egg
- 1 Tbsp oil (I use extra virgin olive oil)
- 1/2 tsp. real vanilla extract
Pumpkin Maple Spread
- 4 Tbsp pumpkin puree
- 2 Tbsp maple syrup
- 1/2 tsp. Zoale's pumpkin spice
Pumpkin Spice Maple Syrup
- 1/2 cup real maple syrup
- 1/2 tsp. Zoale's pumpkin spice
Instructions
- Sift the first four ingredients together, and then add the salt and sugar and whisk well.
- In a separate bowl, add the eggs, buttermilk, oil, and vanilla, and lightly beat together, ensuring the egg is incorporated.
- Add to the dry ingredients, and whisk until combined. Be careful not to over mix.
- Let sit for at least 5 minutes and then cook on your favorite pan or griddle. Add the pancake batter with a ladle or something similar. Once the pancakes have bubbles, flip them over, and let cook until the bottom is just golden brown.
Pumpkin Maple Spread
- Mix all three ingredients and enjoy! Use as a spread, to bring the taste of a pumpkin pie to your pancake breakfast! Note: if you want the spread thicker, place over medium heat for just a few minutes, stirring as needed.
Pumpkin Spice Maple Syrup
- Mix both ingredients together in a pan (I use stainless) and place over medium heat until warmed through (stir as needed). Pour over your pancakes and enjoy. This syrup will intensify the pumpkin spice flavors in your pancakes.
Note: Although Zoale’s pumpkin spice ,blend works very well with this recipe, you can substitute whatever pumpkin spice you have on hand.
