Every season our year-round organic garden provides us food we love. In the spring and summer, one of those vegetables is pole beans. Although we grow bush beans as well, pole beans are my favorite. They are deliciously nutty and substantial, and are truly a wonderful vegetable. I get so excited when the first beans begin to grow. We start them from seeds and create a bamboo trellis for them to climb. They are a great space saver in the garden, and look beautiful as they hang on the climbing vines. Pole beans are delicious, and like all green beans, are a nutritious and low-calorie food perfect for warm weather. If you haven’t tried pole beans, give them a try. If you have a garden they are a great crop. My recipe is below.
Notes
These beans are delicious served with tomato slices and feta cheese. They can also be paired with any meat or protein, and of course other veggies or even a salad.
Ingredients
- 8 to 10 oz. pole beans
- 8 cups water
- 2 tsp. kosher salt (for salting water) and 1/4 tsp.
- 1 tbsp. extra virgin olive oil
Instructions
- Bring water to a boil over high heat and then add salt (use a large pot). Meanwhile, trim off the very ends of the pole beans and discard, and cut up the beans in 1/2 to 1 inch pieces. Once the water boils, add the beans and let cook over medium-high heat uncovered. Cook for about 10 minutes or until desired tenderness. Remove the beans from the boiling water and plunge into an ice bath to stop the cooking. Strain the beans and toss with olive oil and 1/4 tsp salt (add more to taste if desired).
