Have you ever heard of Room on the Broom, by Julia Donaldson? If you have children, I highly recommend it. It has become a Halloween tradition for us, and I read it to my kids all month long. I love picture books, and this is definitely one of our favorites. Besides reading books and making cool Halloween crafts and arts, I have been making some quick and healthy meals for the freezer. This is one of my new favorites. It’s my play on a classic chicken and noodle soup, with a heavy helping of Greek oregano. What’s great about this meal, is that it can be as simple or complex as you would like to make it. At its simplest, this meal can be made in less than 30 minutes. If you are looking for a delicious and quick weeknight meal, this one really delivers. Happy Halloween and Happy Eating!

Freeze leftovers. This makes a great frozen or make ahead meal.
Ingredients
- 2 chicken breasts
- 1 pack spaghetti noodles
- 3 cups chicken stock
- 1 Tbsp Greek oregano (or to taste)
- salt (The amount of salt is highly dependent on your stock. I used a homemade stock, which has no salt added, so I needed a little more salt. If you use a store bought salted stock, you will need less salt.)
Instructions
- Bake the chicken breasts (or you can use leftover chicken, or even a store bought rotisserie chicken).
- While your chicken is cooking, get the pasta water ready and cook the noodles al dente.
- In a separate pot (large enough to hold all the ingredients), heat up the stock and reduce to a simmer.
- Strain the cooked pasta, but don't rinse. Cut up the cooked chicken into bite-sized pieces. Add both to the chicken stock and flavor with salt and oregano. Let it simmer and reduce (uncovered) for about 20 minutes over low heat for a wet pasta. If you would like more of a soup, remove from the heat without letting it reduce. Enjoy!

That dish sounds like a comfort food staple! What’s the difference between Greek Oregano and Italian or what we can get readily in the markets here in the States?
We just found it on Netflix, and we love it. I think I have as much fun reading it to them as they have being read too. Thank you, Deborah! Italian Oregano is milder, and Greek Oregano has a lot more earthiness and flavor. You can use either or the generic oregano you find on the spice aisle. The flavor will not be as intense, but it will still be good.
Antonia we used to love Room on the Broom (kids are teenagers now)! although they were slightly more obsessed with her Gruffalo book! 😛 This looks like a great pasta recipe to add for the boys (one that they could make themselves!)
