I am a huge salad lover, and what better way to eat a salad, but on a sandwich. πΒ I came up with this recipe a couple of years ago, and it is one of my family’s favorites.Β The pita bread is warmed and lightly browned in olive oil, and then topped with salad veggies, feta cheese, and tzatziki.Β It is a delicious vegetarian wrap, which offers a nice protein punch.Β It is reminiscent of a gyro without the meat.Β I am just not a huge fan of gyro meat, and prefer the freshness of the veggies andΒ tzatziki.Β If you are looking for a way to add heartiness to your salad or lighten up a sandwich, this is the perfect wrap for you.Β I hope you enjoy it as much as we do. π
Ingredients
- 4 individual pita breads (preferably Greek or Mediterranean)
- olive oil for heating pita bread (I use extra virgin)
- 3.5 oz. mixed baby salad greens
- 1 small sweet onion
- 3 Roma tomatoes
- 3/4 garden cucumber
- 4 oz feta cheese
- 1/2 cup tzatziki
- salt, and oregano to taste
- aluminum foil to wrap sandwiches
Instructions
- Chop the lettuce and all other vegetables. Crumble the feta cheese and set aside.
- Heat a little oil in the pan. Place the pita bread in the pan gently putting oil on both sides and heat until warmed and slightly golden on both sides. You don't want the pita bread to get crunchy, and it should still be bendable. Cut a piece of aluminum foil larger than the pita bread and place the pita bread on the foil. Repeat with the other pitas.
- Evenly top the pita with lettuce and all the veggies, and the feta cheese. Sprinkle a little salt and oregano over the sandwich. Place a little tzatziki down the middle of the sandwich (not too much).
- Fold up the sandwich like a hard shell taco and take one side of the foil and place it over the folded top. Then place the other side of the foil over the other side, closing the sandwich within the foil. Close up one end of the sandwich with the foil. Slightly rip off the foil on the other end of the sandwich exposing one end of the sandwich. This will hold it together while you eat it. Peel back the foil as you eat. Enjoy!

I know how delicious this can be. I don’t eat much bread, but this is a nice treat. For those vegetarians looking to pump up the protein, would you suggest adding some tofu to the recipe?
