Blueberries are everywhere and I can’t get enough of them.  I am eating them fresh, baking with them, and freezing tons of them.  I don’t know about you, but I love blueberries and lemons together, and try to use that combo as much as possible.  Since blueberries are a favorite breakfast addition of mine, I decided to combine lemons and blueberries in pancakes.  I made pancakes packed with blueberries and topped them with a lemon glaze.  These pancakes are absolutely delicious and something a little different for breakfast.  I hope you make these part of your breakfast.

Next week, I am excited to share my daughter’s birthday cake.  I didn’t have time to finish the post this week, but can’t wait to share it!  Her theme was her own safari zoo. 😀  I hope everyone has a great weekend and are enjoying your summer!

    Blueberry pancakes are a favorite in my family but it might be tough to get them to give up their maple syrup. It’s worth a try though as lemon and blueberries do pair well together 🙂

    I’ve been in heaven the past couple weeks with all the blueberries on sale in the grocery store! I’ve been having a big bowl of them for breakfast each day. I love the lemon glaze on the pancakes. Lemon + blueberries is a fantastic combination. Hope you have a lovely weekend as well Antonia and I look forward to seeing your daughter’s birthday cake!

    I don’t know anyone who can resist a stack of pancakes. Yours look delicious, love the lemon glaze which is perfect on the fluffy blueberry pancakes.

    Have always loved blueberries and pancakes. As a child, I remember going to a restaurant nearly every month in NY called Aunt Jemima’s Restaurant. Today, I don’t eat pancakes very much based on my lifestyle, but including them occasionally (especially after a good workout) satisfies the delicious flavor while quickly replenishing glycogen (available energy) to the muscles of the body.

    These pancakes sound so yummy! I also love the blueberry-lemon combination. I have never tried blueberry pancakes with lemon glaze, but after seeing this recipe, I don’t know why not–sounds wonderful. Thank you for the great idea!

    I’ve never tried American style pancakes (English ones are more like French crepes) but these look very tasty. I’ve always loved the idea of pancakes for breakfast – it seems very indulgent compared to my usual porridge or toast!

    I do love blueberry and lemon as well. It’s refreshing and summery, the perfect choice for a pancake. A bit of sugar glaze makes anything, from a cake to even pancakes, suddenly special and perfect for an occasion!
    I’m excited to see your daughter’s birthday cake Antonia! I want a safari zoo cake for my birthday now too 🙂

    Your pancakes look rather special, and quite different to how we have as pancakes in the UK (more like French crepes, only bigger and a little thicker). I’d love to try American pancakes sometime, all stacked up as they are. So many different uses for blueberries! They aren’t a traditional fruit grown here, although they have become more popular in recent years. We’ve tended to have the black and red currants here in the past, and still do. But I love all your recipes with blueberries in them, so time to have a go! 🙂
