Turkey Breast Tacos

My family is a huge fan of Mexican food.  I like making it at home and putting my own spin on it whenever I can.  Tacos have always been a favorite of mine, especially hard shell tacos.  I love a good crunch, and I balance the fried shell with veggies and a lighter meat.  Don’t worry, the turkey breast is nice and moist, and you won’t miss the beef.  I cook it in a little olive oil and then add chicken stock, tomato paste, and spices, and let it reduce.  It makes a wonderful, moist, and light taco meat. Did I mention it is super simple to make, and can be made in around 30 minutes?  My family loves these tacos, and it was quite a challenge having enough leftover for the photos 😉  I love to make it with my Mexican Slaw, salsa, guacamole, and black beans, and have a Mexican feast.  I hope you enjoy my spin on tacos and enjoy this recipe.

    Yum! We love Mexican Food too. I use ground Turkey a lot myself instead of beef. This recipe is going in my recipe folder! I’m going to give it go rather than use package spices next time!

    Do you use tube tomato paste rather than can since this recipe calls for so little? I’m picking up the ingredients I don’t have in the pantry today at the market so I’m ready to go!

    I’m a fan of any recipe that comes together in about 30 minutes Antonia! Evenings get so busy during the week I’m always looking for something that requires minimum prep 😉 I’m even guilty of using taco seasoning sometimes! I like your recipe though, much more robust and I’m sure the flavors are wonderful!

      Thank you Heather! Me too, the week can get so busy. This really is so easy and most of the 30 minutes is cook time, which leaves time to get your toppings ready and even get other things done 😀

    Who doesn’t like Mexican food even if it is your basic tacos. When I had a houseful of kids these were always on the menu because they could make their own version. Thanks for co-hosting…

    The tacos look and sound absolutely delicious, Antonia. I’d much prefer turkey breast to beef in them. too, and as you say, the way you cook it keeps it really moist. Great recipe and one I will try.
