I am thrilled to take part in the Fiesta Friday Healthy Recipe Challenge! A special thanks to our amazing host, Angie! She challenged me and other food bloggers, to come up with a recipe which includes a green and pineapple, and is healthy. It was such a fun challenge, and such a great experience to use an ingredient I just don’t use enough of, and that is pineapple! I am a huge lover of slaw, and enjoy the endless possibilities with dressings and ingredient choices. This is a flavorful and healthy slaw, packed with veggies, and sweetened with honey and pineapple juice, instead of sugar. This is not a low fat slaw, but contains extra virgin olive oil, which provides a dose of healthy fat. This slaw has wonderful textures and flavors, and is sweet, spicy, and crunchy. My 8 year old daughter is a huge fan of pineapple and lime, and could not stop eating this slaw. She had it for lunch and her afternoon snack in the same day. Thank you Angie for challenging us to do something new, and I am so happy I have another side my little ones will eat up 😀 Enjoy!
Ingredients
- 1/2 head of cabbage
- 2 carrots
- 1/2 parsnip
- 1 granny smith apple
- 1/3 large sweet onion
- 2 jalapeno peppers
- 1/2 bunch fresh cilantro
Dressing
- 1 cup cut-up or crushed pineapple
- 1/4 cup water
- 1 lime
- 1/2 cup olive oil (I use extra virgin)
- 2 1/2 Tbsp honey
- 1 tsp. salt
Instructions
- Thinly slice the cabbage (Hold the cabbage with core-side down and slice in half, and remove the core. Then slice the cabbage, with the inside down on the board. If the cabbage is large you may have to half the cabbage again to minimize the size of the pieces. Take your hands and break apart the sliced cabbage and you will have slaw-ready cabbage.).
- Julienne the onion, apple (peel first), and peppers into long slender pieces. Cut the pepper slices in half.
- Using a peeler, peel the carrots and parsnip into ribbons.
- Mix all of the veggies together well.
- Chop up the cilantro and mix with the veggies.
Dressing
- Chop up the pineapple and place with the water in a blender (you can use canned or fresh pineapple.). Blend until smooth, and then pass the juice through a sieve. You will be left with about 3/4 cup thick pineapple juice.
- Juice the lime.
- Whisk all of the dressing ingredients together.
- Pour the dressing over the slaw and mix well. Refrigerate at least one hour before serving. Mix well and enjoy!

This sounds really good. He-Man loves slaw so, am saving this in my recipe folder for a day I feel like making him slaw instead of picking it up from the deli like I normally do.

Antonia, I love this recipe! Just last week I was searching the internet for a healthier (non-creamy) slaw recipe. I’m going to be making pulled pork and I wanted a lighter side. I’m going to give this recipe a try, talk about perfect timing 🙂

Delicious! I know coz I did make something similar, except yours is far superior! That dressing, to start with, is what’s going to replace my mayo-based from now on. Superb idea using puréed pineapple! 👏👏 And where did you get that bowl from? So cute! 😄
You are so sweet Angie, thank you! I bet your slaw is delicious! That’s a good idea. I might try using less or no water next time when I puree, to see if it is creamier 😀 It is a wet slaw, but the ingredients hold up very well to it 😀 I found that bowl last year at Marshalls, and have been waiting for an opportunity to use it 😀 It is actually a measuring bowl, believe it or not.
