My daughter loves s’mores, so I decided to make something inspired by s’mores for Valentine’s this year. I also wanted to make something she could help me create. We decided to put our creation on a stick, because, well what kid doesn’t like treats on sticks, right?
We decided to make heart shaped graham crackers. It took a few tries, but my heart shaped fondant cutter ended up doing the trick. After I cut the graham crackers, we melted some chocolate and started experimenting. In the end, we decided to dip the marshmallow in chocolate and then affix the graham cracker. We waited anxiously for several hours, and then came the moment of truth. We were both thrilled with how yummy they were and especially how the graham cracker stayed attached to the marshmallow, even after biting into it. My daughter had no problem being the guinea pig. She is such a team player…lol! That afternoon, we made a big batch to test our process and recipe. We had so much fun creating this recipe, and even more fun eating them. Did I mention that my husband also had fun…not making them, but devouring them 😉
These s’mores pops are truly delicious, easy to make, and a perfect way to eat s’mores with your Valentine. I hope you make these part of your Valentine’s Day 🙂
Ingredients
- 8 oz. milk chocolate chips
- 8 oz. semisweet chocolate chips
- 16 graham cracker squares (have additional on hand, because some may break)
- 16 large marshmallows
- 16 lollipop sticks
Instructions
- Cut the graham crackers into heart shapes. Use a sharp heart shaped cutter (a metal fondant cutter works well). Press the cutter firmly on the cracker, and then carefully remove the cut graham cracker, so it doesn't break. Place your heart-shaped graham crackers aside.
- Place the marshmallows on lollipop sticks and line a baking sheet with parchment paper. Place everything where you will be working with the chocolate.
- I use a mixture of semisweet and milk chocolate, because I like cutting the sweetness of the chocolate a bit, while still getting that milk chocolate flavor.
- Place 2/3 of the chocolate chips in a double broiler over medium heat (don't let the water boil underneath). Steam or water will seize up the chocolate. Melt the chocolate and stir as needed. Once melted, remove from the heat and stir in the remaining chocolate chips. This will help temper the chocolate. Place back on the double broiler and keep at a very low temperature, so there is no steam. You are ready to assemble the lollipops.
- The pops will need to be entirely made one at a time. Dip all but the bottom of the marshmallow in the chocolate, covering well. While holding the pop in one hand, grab a graham cracker and dip one side in chocolate. Stick the chocolate side to the marshmallow. Then hold the pop, so that the cracker doesn't slip off, and drizzle chocolate over the graham cracker for a decoration.
- Place the pop on the parchment paper, graham cracker side up to harden. Repeat with all other pops. Place out of direct sunlight and away from direct heat for several hours to harden at room temperature.
- Once the chocolate has hardened, you can stand the pops up for decoration, and/or eat them. Enjoy!
- Note: Store out of direct sunlight in a sealed container for several days.
