This week’s tip: Make a flavorful cream cheese dip for your holiday spread!
This time of year is perfect for rich and creamy dips in an appetizer spread. I first shared this recipe last year, but came up with it several years ago when I was hosting Christmas. That year I came up with a couple of different dips and made them all ahead of time. It was the first year that I was truly prepared. After all the food and gift preparations, my husband and I wearily headed up the stairs for bed on Christmas Eve. We went to check on our little ones, and discovered our daughter had almost a 104 degree fever. We were up with her on and off all night. It took hours for the medicine to bring her fever down. That morning I let everyone know she was sick and I was sure nobody would come. But, to our surprise, almost everyone showed up to celebrate with us. The medicine kept her fever down all day and it didn’t spike again until bedtime. It was a wonderful Christmas day, and I was so happy! I was very thankful I had made almost everything ahead of time. This dip was a huge hit and I have been making it ever since. It is perfect for any event and literally takes 10 minutes to make. It is creamy and flavorful, and the flavors are reminiscent of pimento cheese. It is perfect with chips, crackers, pita bread, crostini, and more. I hope you make this part of your holidays!
Notes
#1 Garnish the dip with a roasted red pepper and use small cookie cutters to cut out shapes.
#2 Use leftovers as a spread on bread or sandwiches.
Ingredients
- 8 oz. cream cheese
- 1 1/2 roasted red peppers (about 1/2 cup chopped)
- 1/4 tsp. salt
- 1/4 tsp. paprika (I use sweet Spanish)
- 1/2 tsp. garlic powder
Instructions
- Chop up the roasted red pepper. Add all of the ingredients to a food processor and puree until smooth. Store in the fridge in an airtight container. This dip can be made several days ahead of time.
