I am just loving fall! My kids and I have been enjoying fall crafts, and are looking forward to corn mazes, picking pumpkins, and all of the wonder this time of year brings. Of course, it also brings pumpkin spice. Fall would not be the same without that delectable mix of spices. My little ones are beginning to enjoy it as much as I do, which makes me so happy. I am still working on my husband. Can you believe he doesn’t like pumpkin spice? Maybe one day 😉
I don’t know about you, but I especially love pumpkin spice with breakfast. I make these pancakes non-stop this time of year. My kids adore them, and even enjoy them plain as a snack. My 6-year-old told me he likes them more than regular pancakes, which had me grinning from ear to ear. I have to agree with him, they are really delicious. As an added bonus, they make the house smell great 😉 Seriously, they are delicious and have become a tradition in our home, since I first shared them almost 2 years ago. I hope you enjoy them and make them a part of your fall tradition.
Notes
#1 If you don't have buttermilk, you have 2 options: use regular milk (you will need around 1 3/4 cups milk ) or add vinegar or lemon juice to milk and let sit for 5-10 minutes before using (it is common to use 1 Tbsp of vinegar or lemon juice per each cup of milk).
#2 Make the dry ingredients in advance (store in an airtight container for longer storage). Add the wet ingredients when you are ready to use.
#3 Make a large batch and freeze. These pancakes freeze well and make for a quick, but homemade breakfast! Take out, defrost, reheat, and enjoy.
#4 Eat as a snack any time of the day!
Ingredients
- 2 cups all purpose flour (I use unbleached)
- 2 tsp. baking powder
- 1 tsp. baking soda
- 2 Tbsp and 1 tsp. Zoale's pumpkin spice
- 1 tsp. salt
- 2 Tbsp sugar
- 2 cups buttermilk
- 1 egg
- 1 Tbsp oil (I use extra virgin olive oil)
- 1/2 tsp. real vanilla extract
Pumpkin Maple Spread
- 4 Tbsp pumpkin puree
- 2 Tbsp maple syrup
- 1/2 tsp. Zoale's pumpkin spice
Pumpkin Spice Maple Syrup
- 1/2 cup real maple syrup
- 1/2 tsp. Zoale's pumpkin spice
Instructions
- Sift the first four ingredients together, and then add the salt and sugar and whisk well.
- In a separate bowl, add the eggs, buttermilk, oil, and vanilla, and lightly beat together, ensuring the egg is incorporated.
- Add to the dry ingredients, and whisk until combined. Be careful not to over mix.
- Let sit for at least 5 minutes and then cook on your favorite pan or griddle. Add the pancake batter with a ladle or something similar. Once the pancakes have bubbles, flip them over, and let cook until the bottom is just golden brown.
Pumpkin Maple Spread
- Mix all three ingredients and enjoy! Use as a spread, to bring the taste of a pumpkin pie to your pancake breakfast! Note: if you want the spread thicker, place over medium heat for just a few minutes, stirring as needed.
Pumpkin Spice Maple Syrup
- Mix both ingredients together in a pan (I use stainless) and place over medium heat until warmed through (stir as needed). Pour over your pancakes and enjoy. This syrup will intensify the pumpkin spice flavors in your pancakes.
Note: Although Zoale’s pumpkin spice ,blend works very well with this recipe, you can substitute whatever pumpkin spice you have on hand.

Keep working on your husband – he might just start feeling like the odd one out and give that lovely mix of spices a try. Oh yes, fall is such a special time of year! The leaves are just beginning to turn here in Michigan. I chuckled when you wrote about your husband not liking pumpkin spice because Matthew isn’t the biggest fan either. I on the other hand, think these pancakes sound terrific! And to think I almost gave in and bought pumpkin pie pancake mix at the grocery last week!

What a great idea and so easy. Thanks for the Zoale’s pumpkin spice mixture. I can relate to your husband’s opinion about pumpkin spice, but for me it’s because those beverages and treats tend to be too sweet. It’s delicious when I can make them myself and limit the sugar. 🙂
