Lime Sugar Cookies

I love adding limes to my desserts in the summertime.  I wanted something fresh and easy for entertaining, and just had to make a lime cookie.  I first came up with this recipe last summer, to celebrate Father’s Day.  It took me a few tries to get the lime flavor where I wanted it.  My mother-in-law suggested that I also add lime zest to the glaze.  That change really made a difference and added the lime punch I was looking for.  I literally couldn’t stop eating them.  These cookies are an ideal dessert for a summer event.  If you want a flavorful and refreshing dessert, try out these cookies.  You will not be disappointed.  Did I mention, they are super easy to make?  I hope you make these cookies a part of your summer 😀

      Thanks Sadie! I had these little butterfly cutters to use on fondant, and was happy to find another use for them 😀 It is hard not to get carried away! They really are delicious.

    Lime is such a refreshing summer flavor Antonia! I love where you’re going with these cookies! I’m bookmarking them so I can use this recipe a little later this summer 🙂 And great tip about making the dough ahead of time and freezing for later use- I’m all about shortcuts!

    I’m so making these Antonia. It is so difficult to spend time in the kitchen now, but for lime sugar cookies I’ll do it, even if I end up baking from the floor — or a short stool to make it easier to open the oven. Summer to me always needs limes, lemons and mint. Add some sugar and you have everything needed for a refreshing day. Now I need a tall glass of mint lemonade before sleep. Thank you my friend.

        Mint lemonade really is wonderful, and since mine is grown indoors I have it all year round. It tastes just as good to me in winter as it does in summer, although hot chocolate is better during winter months than the lemonade, unless I heat it.
