It’s Tips for Tuesday!
This week’s tip: Eat a scary and healthy meal Halloween night and balance out all that sugar!
Green eggs may look scary, but they are a delicious mixture of spinach, feta, and eggs. They are also very healthy, and include a nice balance of high quality protein and nutrients. They are perfect to keep your family trick or treating for hours! If you make the spinach puree ahead of time, it can be made in less than 10 minutes. You can’t beat that!
Notes
#1 Make the spinach puree a day or two ahead. You can also freeze in individual packs and then just pull out as needed. It freezes well.
#2 Serve it with a side of really good bread toasted and topped with olive oil. Or you can even serve it as a green egg sandwich!
#3 Make an omelet instead and put the feta cheese inside.
#4 Make it fun for kids, by reading "Green Eggs and Ham" while they eat.
Ingredients
Green Eggs
- 4 eggs
- prepared spinach puree (see below)
- 1 Tbsp. milk
- 3 oz. feta cheese (or more if you would like it cheesier)
- oil for cooking eggs (I use olive oil)
- salt (if desired to taste)
Spinach Puree
- 5 oz. fresh spinach
- 2 tsp. extra virgin olive oil
- 1/4 tsp. salt
Instructions
Spinach Puree
- Cook the spinach until fork tender. I steam the spinach, but you can use your preferred method. Steaming on the stove-top over medium heat takes about 30 minutes.
- When the spinach is cooked, strain it and ensure most of the water is squeezed out. Puree it with 2 tsp. olive oil and 1/4 tsp. salt. Use whatever device you have handy.
Green Eggs
- Crumble the feta cheese and set aside. Beat the eggs and milk together well, and then add the spinach puree and beat again (make sure the spinach puree has cooled). Add olive oil to a frying pan and heat over medium (if you are using stainless, ensure the oil is sizzling hot). Once heated, add your egg mixture. Scramble your eggs and flip. Add crumbled feta all over the top and cover with a lid to melt the cheese (well, soften since it is feta). Enjoy!
