My daughter, Zoe, just finished a report on Annie Oakley, and is presenting it tomorrow night. I am super excited for her. She gets to dress up like her too, which really helps her get into character. Annie Oakley was an amazing woman who believed in herself and followed her dreams. She knew she wanted to hunt and shoot from a young age and in a time, when that was a man’s game. She didn’t care and went on to have a fulfilling career and make a name for herself. One of my favorite quotes from Annie that Zoe used in her report is, “When a man hits a target, they call him a marksman. When a woman hits a target, they call it a trick. Never did like that much.” What a cool lady for Zoe to learn about. I can’t wait to see her present it! Since Zoe is a mega feta cheese fan, I thought I would share this for her. 😀 This dip is a play on the filling inside tiropita (Greek cheese pita), accented with garlic. It is a wonderful dip or spread and couldn’t be easier to make!
Notes
#1 This is a great make ahead dip, and can be made several days ahead.
#2 Use leftovers as a spread on bread or sandwiches.
Ingredients
- 8 oz. feta cheese (I use cow's milk feta)
- 6 oz. ricotta cheese (I use whole milk ricotta)
- 1 clove garlic
- 1 Tbsp olive oil
Instructions
- Chop the garlic. Preheat the oil over medium heat and add the garlic. Cook until the garlic begins to turn golden (do not burn the garlic). Stir as needed during this process. Remove the garlic from the oil, and let both the oil and garlic cool.
- Add all of the ingredients to the food processor and puree until smooth.
- Use right away or store in the fridge in an airtight container. This dip can be made several days ahead.

Annie Oakley was always a huge inspiration to the gals in our family – even thought we didn’t shoot! Strong female characters are definitely needed in today’s society – good luck to your daughter on her presentation – she chose a winner! And your dip is a winner too!! Easy and tasty…..
