Happy Spring everyone! What a great time of year!
One of the things that I love about this time of year, is that we harvest all of the veggies in our winter garden. This year, we have some beautiful lettuce and spinach, and a bunch of rainbow carrots. Spinach has to be one of my favorite winter veggies, because you can get what you need and it will grow back. Starting in late November through this time of year, we get a steady supply of spinach. I love eating spinach that I just picked, and really enjoy experimenting with it too. Last year I shared my spinach pesto recipe, and this year I started thinking about putting spinach in a biscuit. I love to combine food from my cultures, and have been thinking of a Greek inspired biscuit for some time. It just made sense to make a spinach and feta biscuit. In January, I started working on this recipe, and have made them a few times since. The second time I made these, I forgot to put the crumbled half of the feta cheese in the biscuits. I decided to put it on top of the biscuits, and they turned about even better than the first batch. My daughter called it a happy accident…lol! If you love spinach and feta cheese, you will love these biscuits. The spinach adds a nice background flavor, while the feta cheese adds a punch of flavor. I added a little Monterey Jack cheese for extra creaminess and cheesiness. These biscuits are amazing and perfect for any meal of the day. Pair them with a bowl of tomato soup for lunch or use them as a vehicle for a yummy sandwich. The possibilities are endless.

Notes
#1 If you don't have Monterey Jack cheese, you can substitute other mild and creamy cheeses, like a farmer's cheese or Havarti.
#2 Make the flour mixtures ahead of time. I always do this if I am entertaining.
Ingredients
- 2 cups all purpose flour (I use unbleached)
- 1 Tbsp baking powder
- 1 tsp. sugar
- 1/2 tsp. salt
- 1/4 cup unsalted butter
- 1 cup milk
- 8 oz. feta cheese
- 3 oz. Monterey Jack cheese (optional)
- 1.5 oz. spinach
Instructions
- Prepare the cheeses. Take half the feta cheese and cut into cubes and crumble the rest. Grate the Monterey Jack cheese (this cheese is optional, but I really like the added creaminess and overall cheesiness it adds to the biscuit. I have made it with just feta cheese, and the biscuits are still very tasty).
- Finely chop the spinach.
- Preheat the oven to 450 degrees. Lightly grease a pan and set aside.
- Sift the flour and baking powder together, and then add the sugar and salt, and whisk together well.
- Cut the butter into small cubes and add to the flour. ‘Cut’ the butter into the flour (I use a pastry blender and manually perform this step), until the butter is well incorporated, and only little pieces are seen within the flour mixture.
- Add the milk. It is important not to over mix, just give it a few quick stirs until the milk is incorporated.
- Drop the dough onto a well floured surface. Sprinkle flour on top to ensure that all wet and sticky areas are covered. Lightly and consistently flatten the dough, sprinkling flour on any sticky areas. Flatten out to about half your desired thickness.
- Evenly place the spinach, cubed feta cheese, and Monterey Jack cheese over the dough. Gently roll the dough towards you, and fold sides in as you roll (use flour for any sticky areas as you do this), until you have an elongated dough ball. Gently flatten out to your desired thickness (approx 1/2 in.). If there are any areas where spinach is completely exposed, place a little dough on top. It is OK if you have a little spinach poking through, just try and contain the cheese.
- Using a biscuit cutter, cut the biscuits, and then top each biscuit with crumbled feta cheese. Place on the pan and in the oven. Bake for 12 to 14 minutes, until the biscuits are light golden brown on the top and bottom. If you want the cheese on top browned more, just put under the broiler for 1 to 2 minutes. Enjoy!

Thanks 😀 Yes, I love being able to go outside and pick it as I need it. I get very spoiled in the winter and early spring. Spinach doesn’t do well in the summer in our yard. But, I can’t complain…we will have beans, tomatoes, and peppers!

You are so lucky to have a protected spring garden and the climate to make it work. I had a lovely greenhouse I was so proud of but it blew away in a very violent storm. This recipe is a perfect way to use some of that delectable spinach.

It was a sad day. We still have the foundations, and the plan is to replace it, but I think the design (my husband’s department) is taking a while to make sure we get it right this time.
