Cinnamon is one of my favorite spices, and I try to incorporate it into as many baked goods as possible. I love the balance it provides to sweets. Growing up, my mom would make Greek pastries and she would make the most amazing baklava. It was to die for and still is. My love for cinnamon really begins with baklava and other Greek desserts. If cinnamon can be added, it will be added 🙂 Since I started making biscuits, I like experimenting with different varieties. One of the first biscuit recipes I came up with was a biscuit with cinnamon. Since I have a couple of cinnamon roll fans in my house, these biscuits are always a big hit. After making them a few times, I decided to add cinnamon to the dough as well as the flour mixture (by brushing butter and sprinkling cinnamon sugar all over it). It really helps get that cinnamon flavor throughout.
I usually make several different varieties of biscuits every time I make them, and these cinnamon sugar biscuits always make the list. If not I would probably have an angry and hungry family mob after me 😉
These biscuits are lightly sweetened, flaky, and have a nice cinnamon punch. They are even more delicious topped with glaze, but what isn’t! Happy baking!
Notes
#1 Make the biscuit dry ingredients ahead of time. Anytime I am having guests, I will make this several days ahead.
#2 Make the biscuit dough ahead of time and freeze. They should hold up in the freezer for a couple of months, if packaged well. Take out, defrost, and bake! You can also bake and then freeze (don't add glaze to biscuits you plan to freeze). Simply take out and let defrost, and then heat through.
#3 Freeze the remaining glaze or make ahead of time and freeze. This glaze holds up in the freezer well. Place in a freezer bag and then just clip the end and squeeze onto your biscuits. It only needs to sit out for a few minutes before using.
#4 Change the flavor of the glaze by using other extracts. For instance, an orange glaze is an amazing match for these biscuits!
Ingredients
Biscuits
- 2 cups all purpose flour and more for dusting (I use unbleached)
- 1 Tbsp baking powder
- 2 1/2 tsp. cinnamon and 1 tsp. for inside
- 2 1/2 Tbsp sugar and 1 Tbsp for inside
- 1/2 tsp. salt
- 1 cup milk (any % milk fat will do or you can substitute buttermilk)
- 1/4 cup cold unsalted real butter and 1 1/2 Tbsp for inside
- oil for pan (I use olive oil)
Glaze
- 1/2 cup powdered sugar
- 1/2 tsp. vanilla extract
- 1 3/4 to 2 tsp. milk to desired consistency
Instructions

- Preheat the oven to 450 degrees. Lightly grease a pan and set aside.
- Cut up the 1 1/2 Tbsp. butter into small cubes and set aside. Mix together 1 tsp cinnamon and 1 Tbsp sugar and set aside.
- Sift the flour, baking powder, and remaining cinnamon together, and then add the salt and remaining sugar. Whisk together well. Cut the butter into small cubes and add to the flour. 'Cut' the butter into the flour. I use a pastry blender and manually perform this step, until the butter is well incorporated into the flour, and only little pieces are seen within the flour mixture.
- Once this is complete, add the milk. It is important not to over mix. Just give it enough stirs with a spoon, in order to incorporate the milk into the flour mixture. Drop the dough onto a well floured surface. Sprinkle flour on top to ensure that all wet and sticky areas are covered. Lightly and consistently flatten the dough, being mindful of any sticky areas. Flatten to half your desired thickness. Place the cubed butter set aside evenly over the dough, followed by the cinnamon sugar mixture. Gently roll the dough towards you, and fold sides in as you roll (use flour for any sticky areas as you do this), until you have a tubed-shaped dough. Gently flatten out to your desired thickness (approx. 1/2 in.). If there are any areas where the cinnamon sugar is completely exposed, place a little dough on top.
- Cut your biscuits and place on the pan and in the oven. Bake for 12 minutes or until lightly browned on the bottom and top. Top with glaze (see below)
Glaze
- While the biscuits are baking, mix together the powdered sugar, milk, and vanilla. Stir well until the glaze comes together. If you want it thicker add extra powdered sugar and if you want it thinner add extra milk.
