My husband asked me to recreate one of his favorite dishes from a local restaurant. Surprisingly, it was fairly easy to recreate. I’m really glad he asked me to, because it has become one of our favorite go-to meals. Before that, I hadn’t had fried rice before. Weird, right? I would always order other things. It just never appealed to me before. Isn’t it great when you find new foods you love? This is really a great dish, because it not only freezes well, but most of the components can be made ahead of time. I wanted to share it again, because I originally posted it not long after I started my blog (forgive my older photo). I hope you enjoy this dish as much as we do 😀
Notes
#1 Bake the chicken ahead of time. Either a day or 2 ahead and store in the fridge or up to a month or more in the freezer. For best results, chop the chicken up, wrap in freezer paper, and then place in a freezer-safe container. Defrost and warm through, and it is ready to mix into the fried rice. You can cook the rice a day or two ahead of time and store in the fridge, or freeze for longer storage.
#2 Freeze left-overs in portioned freezer-safe containers. This makes great homemade frozen food. For best results, freeze without the egg mixed in.
#3 Serve with a side of green veggies for a complete meal.
Ingredients
- 1 cup long grain brown rice
- 1 chicken breast
- 1 bunch scallions (green onions)
- 3 eggs
- 2 ½ Tbsp extra virgin olive oil (plus more for frying eggs and baking chicken)
- 2 tsp. teriyaki sauce
- salt to taste (and for baking chicken breast)
- garlic powder (for baking chicken breast)
Instructions
- Preheat the oven to 450 degrees for the chicken.
- Cook the rice according to the package directions (The brown rice I use takes 50 minutes to cook. If you use a different type of rice, adjust the timing of other ingredients.)
- While the rice is cooking, clean and chop the scallions and bake the chicken (If you are cooking rice the old fashioned way, bake the chicken about 25 minutes into the cooking process).
- Rub the chicken with some olive oil, and sprinkle it with a little salt and garlic powder. Bake until cooked through. Remove the chicken from the oven and let it rest for about 10 minutes before cutting.
- While the chicken is resting, heat the olive oil over medium heat (the pan should be large enough to hold and mix all of the ingredients).
- Once the oil is heated, add the scallions and cook for about 10 minutes until they begin to turn slightly brown. Stir often and scrape the pot if needed. While the scallions are cooking, cook the eggs (pop the yolks and fry them in a little oil). Once cooked, remove from the heat and set aside.
- Carefully add the teriyaki sauce and stir. Add the cooked rice and mix well (two spoons or wooden spatulas work well for mixing from this point on). Reduce to low, and chop up your eggs and chicken into bite-sized pieces.
- Add the chopped chicken and eggs to the rice, and remove from the heat. Enjoy!

I love fried rice as it is a great way to use leftover rice. I always make it without the eggs – just a personal preference. I usually make it with veggies but I bet the chicken was good.

I am catching up with posts and have to say this fried rice looks delicious. I love eating rice, I think at times I’d rather have rice than pasta. Fried rice is one of my favorite Chinese take out meals, your homemade version is so much better.
