This past Christmas, I received my first pie bird from my mother-in-law. It was an extra special gift, because my 7 year old remembered I wanted one and let my mother-in-law know. To check out my pie bird story, click here. At that time, I asked my wonderful readers for ideas so that I could start using the cute little bird. Last time, I made a chicken pot pie and this time it is blackberry pie. Thank you to my mother-in-law for the suggestion. I am trying to make a pie every 6 weeks or so using all of the ideas I received, and would love to hear more if there are any 🙂
I found some wonderful slightly tart blackberries. They are not in season here yet, so I was happy to find good quality berries. I decided to be brave and create my own recipe. This is actually my first fruit pie, so I was excited to try something new. I decided to make a quick lemon sugar and use it along with some honey to sweeten the pie. It gave the pie a wonderful flavor and really reinforced both the tartness and sweetness of the berries. The cornstarch helped create a wonderful syrup in the pie and the berries were perfectly tender. I literally could not stop eating it. My pie bird is back perched on my kitchen windowsill awaiting the next pie 🙂

Notes
# 1 Make the pie dough ahead of time and freeze for longer storage.
# 2 Pair this pie with vanilla ice cream.
Ingredients
- 2 9 in. deep dish pie dough circles
- butter for pie dish
- 3/4 cup sugar
- zest of 1 large lemon
- 1/2 cup honey
- 5 cups blackberries (approx 1.5 lb) - I used fresh
- 1/3 cup cornstarch
- 1 egg
- 1 tsp. water
- sugar in the raw or large crystal sugar for pie topping (optional)
Instructions
- If you need to clean your blackberries, ensure you allow them time to dry.
- Preheat the oven to 375 degrees.
- Note: If you are making your own pie dough, make it ahead of time and let it firm up in the fridge. If you are using frozen, take it out of the freezer. That should give it 15 minutes to thaw.
- Zest the lemon and place the zest and sugar in a food processor or small blender. Run until combined and the sugar is fine. This should take just a minute or 2.
- Place the blackberries in a large bowl and mix well with the lemon sugar. Add the cornstarch and mix well. Add the honey and stir until combined.
- Roll out one of your pie crusts and place in a buttered deep pie pan, forming the dough to the pan. Place the pie bird in the middle of the pan if using one. Stir the blackberry mixture and then evenly pour it into the pie pan. Roll out and add the other pie dough, over the top. Trim if needed (make a little hole for your pie bird's head), and press the pie crust and seal the pie. If you are not using a pie bird, make several slits in the pie. Beat the egg and water, and paint evenly over the crust. Sprinkle the sugar all over the top of the pie.
- Place in the preheated oven for 45 to 50 minutes until golden brown on top. Let the pie rest for several hours before cutting into it. I let it sit for 5 hours, but 3 should do the trick.
- Enjoy!

A wonderful blackberry pie, and I like your method of thickening the syrup. I love warm pies and ice cream, too, or with a dollop of whipped fresh cream. We have so many blackberries at the bottom of our garden that I end up giving lots away. We still have several bags of them from last year in the freezer. Blackberry and apple is a popular filling over here, especially for children who don’t like the blackberry seeds.
