I have been making my pancakes with more baking powder than baking soda for years. A few months ago, my family wanted pancakes and I realized I only had a small amount of baking powder. I decided to use mostly baking soda and just the small amount of baking powder I had, to help activate the soda. I loved the results. Don’t you just love when things like this turn out? They reminded me more of a buttermilk pancake, with a nice texture and fluffiness. They are really delicious, and I just had to share them 🙂 These pancakes are a great alternative to buttermilk pancakes. I don’t know about you all, but I don’t usually have buttermilk on hand. The baking soda really makes a delicious milk-based pancake.
Notes
#1 Make the flour mixture ahead, so that these can be made any day of the week.
# 2 Make the pancakes and freeze them. Defrost and warm through for a quick and homemade breakfast.
Ingredients
- 2 cups all purpose flour (I use unbleached)
- 1 tsp. baking soda
- 1/2 tsp. baking powder
- 2 1/2 Tbsp. sugar
- 1 tsp. salt
- 1 1/2 cups 2% milk
- 1 egg
- 1 Tbsp. oil (I use olive oil)
- 1 tsp. real vanilla extract
Instructions
- Sift the flour, baking powder, and baking soda together. Add the salt and sugar, and mix well with a whisk.
- In a separate bowl, beat the milk, vanilla, egg, and oil together with a whisk.
- Add the flour to the wet ingredients and mix together until just combined. Do not over mix.
- Let the mix sit, while a griddle or pan is pre-heating. Oil pan or griddle if required. Give the mix a quick stir, and ladle the batter on the griddle. Flip once the top begins to bubble and the bottom is cooked. Remove from heat once the bottom is cooked.
- Top with a good maple syrup and enjoy!

Interesting! My go-to pancake recipe calls for more powder than soda….I wonder how it would turn out if I flipped them? Maybe I’ll give it a try this weekend.
