I have been making my pancakes with more baking powder than baking soda for years.  A few months ago, my family wanted pancakes and I realized I only had a small amount of baking powder.  I decided to use mostly baking soda and just the small amount of baking powder I had, to help activate the soda.  I loved the results.  Don’t you just love when things like this turn out?   They reminded me more of a buttermilk pancake, with a nice texture and fluffiness.  They are really delicious, and I just had to share them 🙂  These pancakes are a great alternative to buttermilk pancakes.  I don’t know about you all, but I don’t usually have buttermilk on hand.  The baking soda really makes a delicious milk-based pancake.

    Looks delicious! So wonderful when a new recipe comes together. Yeah, I never have buttermilk on hand. I just always make it with vinegar or lemon juice.

    These pancakes look incredibly fluffy, I’m amazed! I agree, I never have buttermilk on hand so it’s always nice to have an alternative. Great tip on making the flour mixture ahead- it’s so much better than buying the box mix at the store.

    Interesting! My go-to pancake recipe calls for more powder than soda….I wonder how it would turn out if I flipped them? Maybe I’ll give it a try this weekend.

      Thanks Cynthia! I think you will be pleasantly surprised. My regular recipe calls for 1 tsp powder and 1/2 tsp soda. Let me know how it turns out for you. I really like it.

        I think mine is similar–the soda is half of the powder. I’ll try to remember to switch them this weekend as a test 🙂
