Khao Suey is a Burmese noodle soup, which can be likened to a chicken noodle soup. It has a flavorful coconut milk broth, and can be made with a variety of meat, or vegetarian, as I have done here. It can contain egg or rice noodles, depending on your preference. I have made this delicious dish as part of Lina’s April Surprise Recipe Challenge, which will take place the end of the month. The judge for this month’s challenge is Jhuls. I was excited to make something that I had neither tasted nor made before. As I started researching it, I quickly realized I was in for a treat. The flavors and textures sounded absolutely amazing.
I settled on a recipe that I liked at Archana’s Kitchen. It had all the components I was interested in, so I could start experimenting. I wanted to make this my own, but also try to keep some of the traditional elements. I decided to use spinach egg noodles, and keep the broth very simple and not too thick. From what I read, the toppings make this soup and since I love salad, this recipe gave me a great jumping off point. I decided to make a quick slaw with white wine vinegar and sugar. I waited in anticipation as the broth finished cooking. It smelled so good and when I tasted the broth, I was blown away. I quickly placed the noodles in a bowl and topped it with a generous serving of the slaw and poured the broth over. I took my first bite, and was amazed at the combination of flavors…the sweet, spicy, and slight background of coconut and vinegar. To top it off, the textures were perfect. I can’t wait to make it again, but next time I think I am going to add some grilled chicken. This is a truly delicious and healthy dish that will make any meal special. Ingredients
- Recipe adapted from Archana's Kitchen
- 8 oz spinach or plain egg noodles or rice noodles
- 1 13 oz can unsweetened coconut milk
- 1 cup water
- 2 cloves of garlic
- 1 Tbsp oil (I used extra virgin olive oil)
- 1 tsp. cumin powder
- 1 tsp. coriander powder
- 1 tsp. chili powder
- 1/2 tsp. salt
Salad Topping
- 3 carrots
- 1/8 small head of green cabbage
- 1/4 red onion
- 1 bunch green onions
- 2 Tbsp white wine vinegar
- 3/4 tsp. salt
- 1 tsp. sugar
Instructions
- Cook your noodles according to package directions, strain, and set aside once ready.
- While the noodles are cooking, get the salad ready. Using a peeler, peel the carrots into ribbons (about 1/2 length of the carrot). Prep the cabbage (Hold the cabbage with core-side down and slice in half, and remove the core. Thinly slice the cabbage, with the inside down on the board. Slice the pieces in half. Take your hands and break apart the sliced cabbage and you will have slaw-ready cabbage.] Slice the red onion in long thin strips, and then cut in half (do not include the onion core). Chop the scallions (clean well first and discard end tips).
- Mix all of the veggies together with the white wine vinegar, salt, and sugar. Set aside.
- Place the oil in a pan over medium heat. Once the oil is heated, add the garlic and cook until light golden brown. Garlic can burn quickly, so keep an eye on it. Remove the garlic from the oil and do not discard the oil.
- Add the coconut milk and water to a pot and stir well with a whisk. Add the garlic, oil the garlic was cooked in, and the spices and whisk well. Bring to a boil over medium-high heat and allow to boil for 5 minutes, whisking as needed. I used an enameled cast iron pot, and I had no sticking issues. If you are using stainless, you may need to whisk more often.
- Assemble your dish. Add the noodles to a bowl and top with the salad. Pour the broth over and fill up about half way. Add cilantro if you have any handy (I did not). Enjoy!
This the first bowl I fixed, and I was a little heavy handed with the slaw 😉
