My family is a huge fan of Mexican food. I like making it at home and putting my own spin on it whenever I can. Tacos have always been a favorite of mine, especially hard shell tacos. I love a good crunch, and I balance the fried shell with veggies and a lighter meat. Don’t worry, the turkey breast is nice and moist, and you won’t miss the beef. I cook it in a little olive oil and then add chicken stock, tomato paste, and spices, and let it reduce. It makes a wonderful, moist, and light taco meat. Did I mention it is super simple to make, and can be made in around 30 minutes? My family loves these tacos, and it was quite a challenge having enough leftover for the photos 😉 I love to make it with my Mexican Slaw, salsa, guacamole, and black beans, and have a Mexican feast. Ingredients
- 1 lb ground turkey breast
- 2 Tbsp olive oil (or preferred oil)
- 1 1/2 cups chicken stock
- 1 Tbsp tomato paste
- 1 1/2 tsp. salt
- 1 tsp. sugar
- 1 1/4 tsp. garlic powder
- 1 1/2 tsp. ground cumin
Instructions
- Heat olive oil over medium heat . Add the turkey breast and continually chop and flip with a spatula until it is cooked through (it will be white when it is done). Add the remaining ingredients and cover and bring to a boil. Let boil for 5 minutes and reduce heat to medium low. Let reduce uncovered for around 20 minutes or until it is the consistency of taco meat (you want some juice left). Stir as needed during this process.
- Using your favorite taco vessel, add the meat and your favorite toppings. Enjoy!

Yum! We love Mexican Food too. I use ground Turkey a lot myself instead of beef. This recipe is going in my recipe folder! I’m going to give it go rather than use package spices next time!
Do you use tube tomato paste rather than can since this recipe calls for so little? I’m picking up the ingredients I don’t have in the pantry today at the market so I’m ready to go!

I’m a fan of any recipe that comes together in about 30 minutes Antonia! Evenings get so busy during the week I’m always looking for something that requires minimum prep 😉 I’m even guilty of using taco seasoning sometimes! I like your recipe though, much more robust and I’m sure the flavors are wonderful!
