This week’s tip: Eat more spinach!
Spinach is an incredibly healthy green, and is packed with vitamins and minerals. Just ask Popeye 😉 It is also delicious and versatile, and can be used in salads, juices, appetizers, and entrees. It pairs incredibly well with salty cheeses, like feta and Romano. I love spinach and it is my favorite leafy green. In fact, we grow it in our garden and I get so excited when it is ready. My all time favorite spinach dish, is spanakopita (spinach pita), which I grew up on. You really can do so much with it, just give it a try. Spinach is a great way to get your greens in for the day!
