Stewed Apples and Oatmeal

Break your breakfast boredom with healthy and delicious stewed cinnamon apples!

These can be added to your favorite oatmeal or as a breakfast side, and can be made ahead.

Core and peel 2 apples (your favorite variety), and chop into bite-sized pieces. Add chopped apples and a little water to a pot (water doesn’t have to be covering them), and sprinkle cinnamon and sugar on top (start with 1 tbsp. of sugar and 2 tsp. cinnamon, and add more if needed at the end). Cook covered over medium heat until fork tender (stir when needed), and remove from heat and let sit for about 5 minutes covered. If not using immediately, place in the fridge (these will keep for 2 to 3 days at least).

Warm a little when ready to use and add to your favorite oatmeal or as a healthy and tasty breakfast side.  They are also a very tasty compliment to toast topped with nut butter.
