Has anyone else been to Dave and Busters with little kids? I may be in the minority, but I have almost as much fun as they do. The only difference is that I am completely wiped out afterwards 😉 They are always ready for more. My kids always have a ball, and I can’t decide if they like collecting the tickets or playing the games more. My son won’t spend his tickets, and he is amassing thousands. I keep wondering at what point he will let some of them go. My daughter on the other hand, strikes a good balance, enjoying spending and saving. I was so tired when we got home, I took some hummus and veggies out of the fridge, and made a meal of it. It really makes a great quick and healthy meal. They each have their favorite hummus flavor. My daughter likes my Roasted Red Pepper Hummus the best, and this is my son’s favorite. They are both super simple to make, so I don’t mind making both. I have to admit, this is my favorite too. It is wonderfully flavorful and very unique. I originally posted this recipe in 2015, and wanted to re-share for anyone who might have missed it. I have been making it steady since then, and always make it when I entertain. I hope you get a chance to try it out 😀 Happy 2017!
Notes
#1 If you are watching your calories, use a combination of water and oil. Just be sure to stir well before serving.
#2 Using dry beans is great. Make a large batch ahead, and then freeze them in 1 1/2 cup servings. Remove from the freezer and allow to thaw overnight in the fridge, before using.
#3 Make this hummus when entertaining. It will be a great addition to your spread and your guests will love it. You can also make it up to 2 days ahead.
Ingredients
- 1 1/2 cups cooked chickpeas (or 15 oz can)
- 1 shallot
- 3 large garlic cloves
- 3/4 tsp. salt
- 1/4 tsp. garlic powder
- 2/3 cup extra virgin olive oil (and more for roasting)
- Note: I do not use sesame tahini in my hummus recipes. Growing up we always made our hummus without tahini, and my mother would refer to it as the 'Greek way'. Try it out...it is really delicious!
Instructions
- Preheat the oven to 350 degrees.
- Split the shallot bulb into individual cloves, but leave the skins on. Lightly grease a pan and place the unpeeled garlic and shallot cloves on a pan and in the oven. Roast for about 20 minutes, flipping at the halfway point. The garlic and shallots should be fork tender when done.
- Remove and let slightly cool.
- Peel and roughly chop the shallots and garlic.
- Place the chickpeas in a food processor (if using canned, rinse first), followed by all remaining ingredients. Run the food processor until the hummus is smooth. Store in the fridge in an airtight container. The hummus will keep for several days. Enjoy!
I have to try this Antonia! I love hummus, but I never seem to have tahini when I need it. A hummus recipe without it? Yay. i just happen to have chickpeas in my cupboard waiting for a recipe! Happy New Year 😀

Happy New Year Antonia! I went to Dave & Busters with Matthew for the first time last year and we loved it! I had such a fun time with the games, it was totally unexpected 🙂 We ended up eating there, but I think I would have much preferred some homemade hummus!
