Happy autumn everyone!
I get so excited every September and try to start the fall season with at least a couple of pumpkin spice recipes. I have to admit, although I love pumpkin, I tend to experiment more with pumpkin spice alone. It is so delicious and can be used to make many dishes warm and flavorful. My favorite pumpkin spice recipes are more breakfasty….if that’s a word 🙂 The other day, I was trying to decide what to put pumpkin pie spice in next, and I started thinking about muffins.
I have had pumpkin muffins and they are good, but again I like to experiment without the pumpkin 🙂 I used quite a bit of pumpkin spice in these muffins, so you can really taste the beautiful flavors. They are incredibly flavorful and leave a sweet pumpkin spice taste in your mouth, which is both pleasing and dangerous. Dangerous, because you want just one more bite. These muffins had trouble making it into my photo, because we kept going back for more. I hope you enjoy them and have a wonderful fall season!

Notes
#1 Serve as part of a brunch when you are entertaining. They are sure to be a hit!
#2 Add chocolate chips for any chocolate lovers in your house.
#3 Freeze leftover muffins. If stored properly, they will keep for several months. Just remove from the freezer and defrost!
Ingredients
- 1 1/2 cups all purpose flour (I use unbleached)
- 2 Tsp. baking powder
- 1/4 Tsp. baking soda
- 2 Tbsp. Zoale’s Pumpkin Spice (or substitute what you have on hand)
- 1/2 Tsp. salt
- 1/2 cup sugar
- 1 cup milk (2% or higher milkfat preferred)
- 1/4 cup and 1 Tbsp. unsalted real butter
- 1 egg
- 1/2 Tsp. real vanilla extract
Instructions
- Preheat the oven to 375 degrees.
- Melt the 1/4 cup of butter and set aside to cool down. Crack an egg and lightly beat. Measure out 1 cup of milk and set aside.
- Use muffin liners or prepare the muffin tin, by melting 1 tbsp of butter and evenly painting the muffin tin cups with a pastry brush, followed by sprinkling a light coating of sugar. I used liners this time, but I often make muffins without the liners. It really depends on how much time I have and what I am making them for.
- Sift the flour, pumpkin spice, baking powder, and baking soda together. Add the salt and sugar, and mix well. Separately mix the milk, vanilla, butter, and egg. Add the wet ingredients to the dry, and lightly mix with a whisk (do not over mix). Fill the muffin cups (just below the rim), and bake for 16-18 minutes, until they bounce back when poked or a cake tester comes out clean. Remove and let cool on a wire rack for a few minutes. Store in a sealed container for several days or freeze for longer storage.

All of those spices together is so magical. I spent a lot of time coming up with my own version, and I hope you enjoy it as much as we do. It tastes so good in almost anything baked and I love adding it to my iced lattes. I would love to hear from you if you try it 🙂

Pumpkin muffins are a staple in our house this time of year! I just roasted two pumpkins to purée and will get to the baking soon enough.
