I hope everyone has had a great August! We have been busy here, and are waiting for this heat to end. I am looking forward to brisk air, pumpkin spice, fresh local apples, and everything fall. At the same time, I am enjoying the end of the cookout season and trying to get my favorite foods in while I can. One of my favorite things to make is pickle relish. I am still taking a little time off, but wanted to re-share my version of this delicious cookout staple. I am hoping to be back next week. I have been getting my little ones ready for the school year, and am also spending some time thinking about the direction of this blog. I hope you enjoy this relish as much as we do. It is delicious and unique, and can literally be eaten with a spoon.
Notes
#1 Use this relish for entertaining. This is a great make-ahead addition to your spread.
#2 Serve it with chips or crostini as an appetizer, and not just as a condiment.
#3 Use it on an everyday sandwich or salad to turn them into something extraordinary.
Ingredients
- 2/3 cup apple cider vinegar
- 1 Tbsp and 1 tsp. sugar
- ½ tsp. ground mustard
- ½ tsp. ground coriander
- ¼ tsp. garlic powder
- 1 cup chopped dill pickles
- ¾ cup chopped peppers (equal parts orange bell, poblano, and cubanelle)
- ¾ cup peeled and chopped roasted red peppers
- ½ cup chopped onions (sweet preferable)
- ¼ cup chopped shallots (about 1 large shallot)
Instructions
- Chop the veggies and pickles into small uniform pieces and mix together (size is really a preference here).
- Meanwhile, add the first 5 ingredients to a pot (stainless works well) over medium heat for about 11-13 minutes until it reduces by about half. Remove from the heat and add the chopped veggies and pickles, and stir well. Place the relish in the refrigerator overnight if possible. Give it a quick stir before serving. Enjoy 🙂
