Making nut butters is super simple and oh so rewarding! Although, I like almond butter, I am really a peanut butter girl. My husband prefers almond butter, so we always make both. He has his own recipe for almond butter, and I have to admit it is the best I have ever had. I have included both recipes below. You can make your own peanut butter in under 5 minutes and almond butter in around 30 minutes (which includes roasting and cooling the almonds). You can’t beat that!
1 cup roasted and salted peanuts (blister peanuts work well)
1 tsp. almond oil
1 1/2 cups raw almonds
2 to 4 tbsp. almond oil
2 to 4 tbsp. honey
pinch of salt
Add the peanuts to a food processor and run it until it begins to form into peanut butter. Add the almond oil to help finish the process and run until smooth. You can add a little more oil if you would like it smoother. Just remember, that too much oil will impact the taste, and of course the calories!
Dry roast the almonds, by laying them in a single layer on a baking sheet in a 375 degree oven. They should be done in 8 to 10 minutes. Watch them closely and don’t let them burn. If they have been roasted long enough, you should be able to hear them sizzle and smell them. They will also pop some once removed from the oven. This is a good sign.
Let them cool slightly, and then add them to a food processor. Run the processor until the almonds are crushed and begin to come together. Be patient with this step. Add the oil, by starting with 1 tbsp (if you would like it creamier, add more oil, but do it slowly and check it along the way). Once you are satisfied with the amount of oil, add a pinch of salt and honey. Start with 1 tbsp. of honey and taste it before adding more. In order to make a smooth almond butter, the processor will need to run around 15 to 20 minutes. You are looking for a creamy texture.
