It’s Tips for Tuesday and this week’s tip is inspired by Cinco De Mayo! I hope everyone has a fun and flavorful Cinco De Mayo!
This week’s tip: Use guacamole as a healthy spread for Mexican pizza.
Make a lightening fast and delicious Mexican pizza which can be used as an appetizer, side, or even the main meal. Guacamole makes a delicious and healthy ‘sauce’ for Mexican pizza, and you can leave it plain or add veggies. I like adding onions, peppers, and tomatoes to mine. This is also a great dish to make with your kids. It is one of the first dishes my six year old has made, and she is able to get it all ready for me to put in the oven. She feels so grown up when she makes it and I just love it!
Yields 4 pizzas
4 flour tortillas (8 inch diameter)
1/2 cup guacamole
8 ounces colby jack cheese (or preferred)
oil for greasing pan
Preheat oven to 450 degrees.
Spread guacamole on the tortillas, and then top with cheese. Lightly grease your pan and bake at 450 degrees until the cheese is melted (8 to 10 min). This will happen quickly, so keep an eye on it. Cut into triangles and enjoy.
