This week’s tip: Use up those garden tomatoes by making your own pizza sauce!
Pizza sauce is super simple to make and a great way to add a healthy and fresh component to pizza. It is also a great way to use up those summer tomatoes and basil if you grow them like me. You can make a big batch of sauce and freeze it in portions, so that you always have some available. Try it with Zoale’s Three Cheese Pizza .
Ingredients
- 6 medium tomatoes
- 2 large garlic cloves
- 1 1/2 tsp chopped fresh basil
- 1 tsp salt (not used all at once)
- 1 1/2 tsp sugar (not used all at once)
- 1/4 tsp. garlic powder
- extra virgin olive oil
- balsamic vinegar
Instructions
- Preheat the oven to 375 degrees.
- Clean the tomatoes and slice in half, and peel the garlic cloves and slice into thick even slices. Grease a deep oven pan (I use a cast iron pan that is 2 1/2 in deep) and place the tomatoes in cut-side up, and place the garlic slices on the tomatoes, so they aren't directly on the pan. Sprinkle 1/2 tsp. salt and 1 tsp. sugar evenly over the tomatoes. Drizzle olive oil evenly over the tomatoes (I use about 1 tbsp.) and then lightly drizzle the vinegar over the tomatoes (not more than 1 tsp).
- Cover the pan with aluminum foil and place in the preheated oven. Cook for 50 minutes to 1 hour until fork tender. Once cooked, puree with the basil, remaining salt and sugar and garlic powder. Either use a heat proof blender or an immersion blender. If you do not have either, let the tomatoes cool and puree in a blender or food processor. If your device will not puree the skins of the tomatoes, make sure and peel them first.
- Use immediately or store in the fridge for up to 2 days. You can also freeze the sauce. Enjoy!

I was making something like this all summer with our garden tomatoes. I make it by the sheet pan full and freeze it in quart jars. Don’t even add the sugar since garden fresh tomatoes are pretty sweet on their own. Brilliant idea!
