This week’s tip: Chop and freeze chicken for a later meal!
Bake several chicken breasts at once (I sometimes cook 6 to 8 at a time). Bake some with different spice combinations, and some relatively plain. You can use the more flavorful chicken as a main dish, on salads, with pasta dishes, etc. The plain chicken can be dressed up later, or used in soups, fried rice, and more. You will love this time saver!
Bake the chicken thoroughly. Remove from the pan and let sit for about 10 minutes, and then chop into bite-sized pieces. Place in the refrigerator overnight with any pan juices mixed with the meat. Then, place the cut-up chicken in a freezer safe container (wrap in freezer paper first for best results).
Remove the amount you want from the freezer and defrost. Add to a salad for a quick and healthy meal; pair with a veggie for a quick weeknight meal; or add to a soup or pasta dish. The sky is the limit.
