Feta and Spinach Biscuits

Happy Spring everyone!  What a great time of year!

One of the things that I love about this time of year, is that we harvest all of the veggies in our winter garden.  This year, we have some beautiful lettuce and spinach, and a bunch of rainbow carrots.  Spinach has to be one of my favorite winter veggies, because you can get what you need and it will grow back.  Starting in late November through this time of year, we get a steady supply of spinach.  I love eating spinach that I just picked, and really enjoy experimenting with it too.  Last year I shared my spinach pesto recipe, and this year I started thinking about putting spinach in a biscuit.  I love to combine food from my cultures, and have been thinking of a Greek inspired biscuit for some time.  It just made sense to make a spinach and feta biscuit.  In January, I started working on this recipe, and have made them a few times since.  The second time I made these, I forgot to put the crumbled half of the feta cheese in the biscuits.  I decided to put it on top of the biscuits, and they turned about even better than the first batch.  My daughter called it a happy accident…lol!  If you love spinach and feta cheese, you will love these biscuits.  The spinach adds a nice background flavor, while the feta cheese adds a punch of flavor.  I added a little Monterey Jack cheese for extra creaminess and cheesiness.  These biscuits are amazing and perfect for any meal of the day.  Pair them with a bowl of tomato soup for lunch or use them as a vehicle for a yummy sandwich.  The possibilities are endless.

This is our garden this past January.  I loved lifting the cover to find something vibrant and growing underneath.

      Thank you Lynn! My husband built some raised beds a few years back and then fixed the hoop system to cover it in the winter. I have really enjoyed it! I wish I could send you some! They are delicious…any excuse to eat a biscuit 😀

        Thanks 😀 Yes, I love being able to go outside and pick it as I need it. I get very spoiled in the winter and early spring. Spinach doesn’t do well in the summer in our yard. But, I can’t complain…we will have beans, tomatoes, and peppers!

        That’s perfect! I hope to set up something like that when I get a home. In a month or two I will set up my balcony garden for some herbs and a few veggies.

    Antonia, I am a little envious, I am not going to lie.. having your own veggie garden, is something I would love. Nothing beats going out into the garden and picking your own home grown veggies. My goodness, your spinach it thriving, so beautiful.
    I adore, spinach and feta. The combination for me is just spot on. i am going to pin your recipe, and I promise you, these will be made and soon 🙂

      I have to admit, it is very nice 😀 The winter garden is my favorite…not much weeding and no bugs 😉 I wouldn’t have it, if it weren’t for my husband! He had the idea and built the gardens.     You are so lucky to have a protected spring garden and the climate to make it work. I had a lovely greenhouse I was so proud of but it blew away in a very violent storm. This recipe is a perfect way to use some of that delectable spinach.

      I totally agree Hilda. As long as we keep the gardens covered as needed, we generally have nice over-wintered veggies. That is so sad about your greenhouse 🙁 Do you have plans to build another one? Thank you for the kind words and for stopping by!

        It was a sad day. We still have the foundations, and the plan is to replace it, but I think the design (my husband’s department) is taking a while to make sure we get it right this time.
