One of my favorite things to do is create dips and finger foods. I came up with this recipe for a party spread several years ago. I was looking for a funner way to serve brushcetta and was so excited when it turned out. It’s fresh, flavorful, and delicious, and perfect with the crunch of the crostini. I serve it regularly once tomatoes come into season. I hope you enjoy my twist! Happy Spring!
Notes
Use the left-overs as a pasta or pizza sauce...delicious. For best results, puree the sauce if using on pizza.
Ingredients
- 6 Roma tomatoes
- 1 1/2 tsp. balsamic vinegar
- 3/4 tsp. salt
- 1 1/2 tsp. sugar
- 2 large garlic cloves
- 1/8 cup chopped fresh basil
Instructions
- Chop the tomatoes (into 6 to 8 chunks) and garlic. Rough chop the basil.
- Add the tomatoes, vinegar, salt, and sugar to a food processor, and give it a few pulses. Add the garlic and basil and give it about 8 to 10 pulses for a salsa like consistency (less pulses for a chunkier dip).
- Pair with crostini. Enjoy π
