Bruschetta Dip

Summertime for me is so much about what is available from local farm stands and our own garden.  The juicy and flavorful veggies of summer just can’t be beat, and my favorite are tomatoes.  I just love tomatoes, and especially enjoy them raw when they are in season.  I also love fresh herbs in the summer, and there is nothing like walking outside and gathering fresh herbs for your meal.  With basil and tomatoes in abundance, it just makes sense to make bruschetta.  The textures and flavors are really hard to beat.  I was having a party and wanted to include it in my spread, but didn’t want to take the time to top each piece of crostino.  I also wanted something a little different.  I came up with a salsa-like bruschetta dip and paired it with homemade crostini.  It was a big hit and a delicious way to enjoy bruschetta flavors.  I hope you have a chance to try it.  It is unique and delicious, and truly perfect for summertime!

Bruschetta Dip

1 1/2 cups (enough for a large party of 20 to 30 guests, with other appetizers)

  • 6 Roma tomatoes
  • 1 1/2 tsp. balsamic vinegar
  • 3/4 tsp. salt
  • 1 1/2 tsp. sugar
  • 2 large garlic cloves
  • 1/8 cup chopped fresh basil
  • Chop the tomatoes (into 6 to 8 chunks) and garlic. Rough chop the basil.
  • Add the tomatoes, vinegar, salt, and sugar to a food processor, and give it a few pulses. Add the garlic and basil and give it about 8 to 10 pulses for a salsa like consistency (less pulses for a chunkier dip).
  • Pair with crostini. Enjoy 🙂
  • Notes

Use the left-overs as a pasta or pizza sauce...delicious. For best results, puree the sauce if using on pizza.
