Blackberry Pie

This past Christmas, I received my first pie bird from my mother-in-law.  It was an extra special gift, because my 7 year old remembered I wanted one and let my mother-in-law know.  To check out my pie bird story, click here.  At that time, I asked my wonderful readers for ideas so that I could start using the cute little bird.  Last time, I made a chicken pot pie and this time it is blackberry pie.  Thank you to my mother-in-law for the suggestion.  I am trying to make a pie every 6 weeks or so using all of the ideas I received, and would love to hear more if there are any 🙂

I found some wonderful slightly tart blackberries.  They are not in season here yet, so I was happy to find good quality berries.  I decided to be brave and create my own recipe.  This is actually my first fruit pie, so I was excited to try something new.  I decided to make a quick lemon sugar and use it along with some honey to sweeten the pie.  It gave the pie a wonderful flavor and really reinforced both the tartness and sweetness of the berries.  The cornstarch helped create a wonderful syrup in the pie and the berries were perfectly tender.  I literally could not stop eating it.  My pie bird is back perched on my kitchen windowsill awaiting the next pie 🙂

    A wonderful blackberry pie, and I like your method of thickening the syrup. I love warm pies and ice cream, too, or with a dollop of whipped fresh cream. We have so many blackberries at the bottom of our garden that I end up giving lots away. We still have several bags of them from last year in the freezer. Blackberry and apple is a popular filling over here, especially for children who don’t like the blackberry seeds.
    I remember your original post about the pie bird well, and I’m glad to see it’s been so useful. 🙂

      Thank you Millie! Me too, pies are just wonderful with a little whipped cream or ice cream! Blackberries and apples sound delicious together. I will have to put that on my list! I am really happy to be getting use out of it, and I love looking at it perched on my windowsill 🙂

        I think I am going sweet again. I have a few more fruit ideas that were shared. One was a strawberry rhubarb, which might be perfect for mid-spring 😉

    This pie is enticing me as I stare at it on my monitor Antonia! Glad to see you are still having fun with you pie bird- it was such a thoughtful gift 🙂 Fruit pies are my favorite and are a true sign of spring/summer. I can’t wait until berries start appearing at the store here in Michigan!

      Thank you Francesca! I do too, but never made one until now. I think I am hooked 😉 It was very tasty, but not very kid friendly. My 5 year old wouldn’t try it and told me he thinks I might only get 2 likes..lol!

    My Mom’s blackberry pie was a family favorite. It always reminds me of home. Your pie looks just perfect. The photo’s are beautiful as well.     I love blackberry anything! Looking forward to the fresh picking season. We have several bushes in the yard and I have a hidden place I forage them. We usually make blackberry cobbler but this pie makes me want one now!

    I have a thing about blackberries and pie – but I don’t often eat it because it’s so often made with the prepared filling! This looks amazing and I’m pinning for blackberry season!
